Carmel Corn

It's offical... I have my Christmas tree up!!  Yes, I know it's before Thanksgiving and all, but I don't care.  I LOVE Christmas!  It's my favorite time of year and I'm going to milk it for all it's worth!! 

Thought I'd share a little recipe with y'all this morning to munch on while decorating for the holidays.  I made this recipe for Halloween and it was a big success!!  This Carmel Corn is melt in your mouth buttery goodness.  I highly recommend whipping up a few batches of this... one for gift giving and one for your self of course.




Carmel Corn

2 bags of plain microwave popcorn
2 cups brown sugar
1/2 cup light corn syrup
1 tsp. salt
1 cup butter
1/2 tsp. baking soda
1 tsp. vanilla

Line your counter top with wax paper.



This is what I used


Place popped popcorn in a bowl and shake to get the unpopped kernals to the bottom.  Then scoop out the popcorn, leaving the kernals and place in two greased baking pans (I used disposable).  Preheat oven to 250 degrees.  In a medium saucepan over medium heat, combine the brown sugar, corn syrup, butter, and salt.  Bring to a boil stirring enough to combine. 

 Once mixture starts to boil, boil for 5 minutes.  Remove the saucepan from heat and add the baking soda and vanilla.  The mixture will bubble up.  Stir until the mixture settles.  Pour mixture evenly over popcorn in baking pans and stir to coat the popcorn.  Don't worry about every piece being coated at this time.  Bake for 1 hour, removing and stirring popcorn every 15 minutes. Remove from oven and dump carmel corn out onto the wax paper.  Allow to cool completely before packaging in an airtight container.
